Dagma restaurant presents its new Spring-Summer 2024 menu

The Dagma restaurant delights its diners this season with its new gastronomic proposal full of textures, contrasts and surprises designed by chefs Pedro Montolio and David Bourg that can be enjoyed from this week on the third floor of the Hotel Barcelona Princess.

The new summer menu consists of 11 starters, 7 main courses and 3 desserts, and this time also includes an ideal option for those who prefer smaller portions to try more dishes: the tasting menu. Those who opt for the tasting menu will be able to taste 6 dishes from the menu in a reduced version and taste 5 different wines selected for the occasion by Miquel Molina, director and sommelier of Dagma.

Dagma Restaurant, true to its essence, offers the perfect balance between traditional Mediterranean cuisine and modernity, with undisputed prominence of seasonal and proximity products. We spoke with Pedro Montolio, Dagma’s chef, so he could share with us some of his favorite creations from the new menu:

“In the spring menu we can find traditional dishes from other cultures such as Ceviche, but made with an exceptional local product such as red shrimp from Palamós or spiced beef rib with potato parmentier, with which we want the diner to perceive Asia through a marinade of Chinese spices with 37 hours of cooking. We wanted to include two proposals that we know will excite diners who choose the paired tasting menu option. These are the marinated salmon with yogurt, truffle and cane honey or the blue cheese cylinder with hazelnut praline and smoked pear. Their sensational pairings, signed by the Familia Torres winery, underline the flavors and nuances of these proposals in a sublime way. And finally, we have included in the menu a dessert with which we have wanted to pay tribute to Auguste Escofier by revisiting his iconic Pêche Melba, with the utmost rigor and respect, but in our own way.”
